Caramelised Pear Cake

I’ve never been a fan of mixing fruit with dessert but this cake is unreal.20140610-215337-78817190.jpgMy mother asked me to make this cake for her friend but as soon as it was out the oven I had to have it… with ice cream. Ergo, i made two. The more, the merrier, right?

Caramelised Pears

  • 4 pears (peeled, seeded & quartered)
  • 50g unsalted butter
  • 2 tbsp granulated sugar


  • 300g unsalted butter (room temperature)
  • 250g caster sugar
  • 4 eggs (medium)
  • 150g flour
  • 100g ground almonds
  • 1 tbsp cinammon



  1. Set oven to 170°C (340°F). Butter or spray with non-stick spray a 9″ cake pan
  2. Melt the butter in a pan over medium-high heat
  3. Once frothy, add the sugar and dissolve
  4. Add the pears and cook evenly until caramelized (around 7 minutes). Leave to cool
  5. In a bowl, cream the butter and sugar together
  6. Add one egg + 1 tbsp flour at a time mixing thoroughly throughout
  7. Add the remaining flour, almonds and cinnamon
  8. Pour batter into pan and drop in the pear quarters
  9. Pour over the pear juices and bake for 50-55 minutes until golden brown (until a toothpick comes out clean)
