Cookie Crumble Cheesecake Bars





Bars are my favourite goodies to make. They’re fast, hassle-free and can feed an army (or a class at an all girls’ school).

I will reinstate this once again: I love cream cheese. These bars were created when I couldn’t decide whether to make cookies or cheesecake, so I made both.

Having run out of graham crackers, I crushed a few oreos in to compensate.



  • 1½ cup graham cracker crumbs (or digestive)
  • 5 tbsp unsalted butter (melted)
  • 5 tbsp unsalted butter (at room temp)
  • ⅓  cup light brown sugar (packed)
  • 3 tbsp granulated sugar
  • ¼ tsp salt
  • 1 tsp + 1 tsp vanilla
  • ¾ cup flour
  • 1 cup chocolate chips
  • 10 oz cream cheese (280g)
  • ¼ cup caster sugar
  • 1 large egg



  1. Set oven to 165°C (325°F). Line a 9 x 13 pan with non-stick paper
  2. Mix together the crumbs and melted butter until combined
  3. Pat the mixture into the bottom of the pan and bake for 6 minutes. Set aside
  4. Beat together the butter, brown & granulated sugars, salt and vanilla until combined
  5. Stir in the flour until just incorporated
  6. Fold in the chocolate chips and set aside
  7. Cream together the cream cheese and caster sugar until smooth
  8. Mix in the egg and vanilla until just incorporated
  9. Pour the cream cheese batter onto the crust and sprinkle cookie dough over the top
  10. Bake for 30 minutes or until set
