Chocolate Zucchini Bread






I’m not the strongest proponent of vegetables in general, let alone in baked goods, but I must admit that the zucchini here is divine. The moist texture and deep chocolate favours make this loaf a favourite amongst mothers. Make this next time your mom has friends round and they’ll become too full to gossip and leave (you in peace). For additional brownie points, pack them one of the two loaves this colossal recipe makes and they’ll never want to come round again, in fear of gaining weight.


  • 3 cups
  • 1 cup vegetable oil
  • 2 tsp vanilla
  • 2 cups caster sugar
  • 3 cups grated zucchini
  • 2 ⅓ cups flour
  • ½ cup cocoa
  • 2 tsp bicarbonate of soda
  • 1 tsp cinnamon
  • 1 tsp salt
  • ¼ tsp baking powder
  • ½ cup chocolate chips
  • ½ cup chopped nuts (optional)



  1. Set oven to 180°C (350°F)
  2. Mix together the eggs, oil, sugar and vanilla
  3. Fold in the zucchini
  4. Add dry ingredients and mix well
  5. Pour into 2 greased 9 x 5 loaf pans
  6. Bake for 45 minutes or until a toothpick comes out clean
