The best part about these coconut macaroons is that fresh out the oven you can crumble them into your favourite ice cream. Sublime.
The taste itself is 100% coconut and certainly not overly sweet. If you prefer a more tart or sweet taste, feel free to add lemon juice or more sugar and if you’re feeling really wild, dip these macaroons into melted chocolate.
- 150g shredded coconut
- 60g caster sugar
- 2 egg whites
- Preheat oven to 170°C
- Whisk together the egg whites and sugar until white and frothy
- Add the coconut and mix well
- Form small mounds onto a lined baking tray
- Bake for 20-25 minutes or until golden brown
