Coconut Macaroons

This is by far the simplest recipe you will ever encounter. With only 3 ingredients these simple bites can genuinely be made in 60 seconds and that’s not even the best part. The best part about these coconut macaroons is that fresh out the oven you can crumble them into your favourite ice cream. Sublime.
The taste itself is 100% coconut and certainly not overly sweet. If you prefer a more tart or sweet taste, feel free to add lemon juice or more sugar and if you’re feeling really wild, dip these macaroons into melted chocolate.
Ingredients
- 150g shredded coconut
- 60g caster sugar
- 2 egg whites
Directions
- Preheat oven to 170°C
- Whisk together the egg whites and sugar until white and frothy
- Add the coconut and mix well
- Form small mounds onto a lined baking tray
- Bake for 20-25 minutes or until golden brown
